All you need is water! 6-8 - 4-inch pancakes: 1 cup mix; 3/4 cup water. 12-16 - 4-inch pancakes: 2 cups mix; 1-1/2 cup water. 18-24 - 4-inch pancakes: 3 cups mix; 2-1/4 cups water. Prefer waffles? To make thirteen-to-fifteen 4 inch waffles, blend: 2 cups mix, 1-1/2 cups water, and 2-2/3 tbsp. oil. Cook according to waffle iron instructions. 1. Heat pancake griddle to 375 degrees F or medium heat. Griddles take a while to preheat - you'll know it's ready when a drop of water on it sizzles and disappears. 2. Mix ingredients until just combined (batter will be slightly lumpy). For thinner pancakes, add more water. For thicker pancakes, add more mix. Let batter sit a few minutes before making. 3. Pour batter onto griddle, flip when edges start to dry and bottoms are golden brown, and serve. For the fluffiest pancakes, don't flip 'em more than once!
